Official BBQ is situated outside the main traveled roads. It's in the countryside and if you're in this area, it's most likely a planned deliberate drive. So it took a bit of a drive and I was wondering if the GPS had the location correct. In the end, it guided me to the what would be Pennsylvania's equivalent of a roadside BBQ shack.



The effervescent enthusiastic teenage girl responded order the Brisket and the Fries when I asked what was the signature offering. The fries arrived scorching hot and the brisket arrived at room temperature.

The fries were fantastic, ranking with the best fries if not the best fries my palate had tasted. Crispy exterior, slightly creamy interior, salty, peppery, packed with flavor. My only complaint is that the cook could have stopped one salt shaker shake short.


I didn't really want a sandwich.  I just wanted to brisket and so flipped the top off and started on the brisket. The pitmaster rustic cut the brisket into about 3/8 in. slices. A good sign. Glaringly obvious is the cut with the grain rather than against. I thought this is going to be rough and chewy. The pink ring wasn't so pink. It's not emanating a smoky smell.  Record so far 1-3.

Still the proof is in the eating.  And the eating was fantastic.  This was much better than any BBQ I've had in northern US.  This was a man among boys. The brisket was mildly smoky but it was seasoned through and the meat was so well marbled and tender.  I had the fatty brisket slices and that's the only proper cut of brisket that should be served.  It pulled apart easily without falling apart, another indication of attentive passionate smoking. Although it came with a light squirt of BBQ sauce, it didn't need any, a final testament to the goodness of the brisket.

Official BBQ offers the best brisket I've had to date up north.
