The "world famous" Z Man is stone cold room temperature with the melted smoked provolone re-solidified into an unappealing solid hard cap glued to the brisket. The beef brisket sans the accouterments is tender, mildly moist, and with an agreeable amount of smoke.The ribs comes with a chewy dry bark, bland seasoning, and needs an hour more in the smoker to tenderize. It needs a boost of flavor with Joe's fantastic tasting BBQ sauce. However, great ribs shouldn't require sauce. I feel ribs I typically have more flavor and more tender.
The pulled pork, their specialty, is the least tasty item, mostly dry and with the minutest hint of smoke. It is Midwest bland and needs a heavy dose BBQ sauce. All the Joe's BBQ sauces are fantastic but the pork is disappointing. It isn't bad but just a big letdown in light of the hype.
Maybe everything is atypical but today Joe rates 3 out of 5 stars.
