Big Papa's occupies a former Wendy's Hamburger. Across the street is an abandoned Taco Bell building. Business is light this evening but seeing a trailer in the back with smoke rising out the stack is a good sign.
The Burnt Ends appear to have been burnt seemed by using a propane torch to produce a uniform burnt bark. The Ends taste bitter but the pieces are a deent ratio of beef and fat but not melt in the mouth ratio. The BBQ sauce is too sweet.
Sampler Platter. Ribs, Pork, and Beef. My favorite by far are the ribs. The ribs are fall off the bone tender but the flavor is bland. The sauce adds a needed kick but ribs should stand on its own without the help of sauce. The pork is the next favored item with a good mouthfeel but typical in texture and flavor. The beef is good quality but has a stringy dry texture which is an automatic minus for me.
It is good for up North BBQ, made with care and better quality than mass produced Famous Dave's, but it tastes as a half-hearted effort compared to southern BBQ where competition demands the pitmaster's best. 3.25 stars.
