For a big name BBQ joint, the traffic is light and the clientele look like low end Walmart shoppers. The well coiffed old hostess carries an air of class superiority and thinks the clientele too low class to step foot into this establishment. The waitress is aloof and mostly absent. Those with southern charm need not apply for a job here.
Little Bob Gibson Bar-B-Q Sampler. I settled for the Sampler with my choice of 3 meats as pulled pork, brisket, and smoked turkey.
The pulled pork was a travesty of dry, flavorless, and stringy meat. Either it was overcooked or sat under a heat lamp gone wild. And it appeared mostly chopped, not pulled.
Gibson did the brisket fairly well, moderately moist, and slightly smoky. Not even close to championship form.
The smoked turkey was a blue ribbon winner, tender, moist, smoky, and soaked to the core with a just right briny flavor. It didn't need any white sauce and any sauce added would have masked the turkey's subtle flavors.
If I were closed minded and Bib Bob Gibson's was my first time eating BBQ, I would have little reason to be enthusiastic to try BBQ again. Except for the turkey, I was underwhelmed. Maybe Gibson's saves their best and their charm for the BBQ competitions. Sweet home Alabama it wasn't.
