The skin softened, nowhere near glass crispy. The cut had a very thin layer of subcutaneous fat. The meat was a little less rough and slightly more moist than the adult pig. Other than these minor subtleties, I detected no difference between this suckling pig and the adult pig. If I wasn’t told it was suckling pig, I wouldn’t have known it was. Tastewise, it was bland, little flavor saturating the core. For $19 a pound, I expect a profound difference. I expect to be writhing in ecstasy instead of feeling “eh”…which led me to wonder if I was a world class sucker when told it was suckling pig.
