In-N-Out would have been a perfectly fine stop but I wanted local flavors. Serendipity brought me to Flavors of Louisiana which brings humid New Orleans minus the seediness to arid Arizona. Alas only one evening the metro to indulge in Flavors.
Oyster Po' Boy with a side of gumbo. Various theories abound regarding the origin of the name Po' Boy. I'll offer my own theory albeit totally unvalid. You'll be a Po' Boy after buying one because this set me back $12 for a six incher. The oysters were missing bone filling meat, the quantity stingy, and the batter to oyster ratio high but the oysters did taste relatively fresh. The overall dressed package was indeed soul satisfying as southern food's reputation. The gumbo was smoky with a deep earthy flavor.
Boudin balls. Rice and shredded pork mix. The texture isn't the greatest, being mushy. The stronger flavor of the gumbo was still the dominant flavor and masked the subtler flavors of the boudin.
Crab Landry, the daily special, was an open face sandwich with a crab, celery, pepper, and onion stew that tasted as if it had been simmered for hours. It was soulfully satisfying, deep, rich, mildly spicy, and yet somehow light. It left me craving more. The shrimp were fried to perfection and with a couple more needed.

The restaurant has transformed. Order from the counter now is fully sit down.
I don't recall what this dish is but it was nice. No complaints.
