Iberico Hamon is premium priced but in a blind taste test, I can't say it's worth the premium price. The Iberico is sliced razor thin to maximize the surface area. The fat cap is a bit rancid or at least the top is. I cut that off. The hamon has that familiar chewy prosciutto texture but a little less so. The flavor is a bit more smoky but not worth the premium.
