I walked in with the thought that Jim's is a counter service maybe fast casual small to medium sized establishment. Instead, it's sized about the same as Appleby's.

The waiter tells me they do Alabama style BBQ.  I've had Gibson's in Georgia so my mind automatic synchronizes with that style, right or wrong.

 

I ask the waiter about the signature dish and he unhesitatingly states they do Brisket best. I'm glad he said that as that's what I have in mind.


Brisket Platter. I chose Mac and Cheese and Collards as my two trimmings as they call it. The collard greens are tart as anticipated but not as soft as I would prefer. The mac and cheese tastes richer and more artery clogging than the Kraft's. I like it.

The brisket is sliced too thin by the Franklin standard and falls apart with the slightest fork stab. I pick up a slice and gravity takes it toll. The brisket is lean but by not dry whatsoever. It's lean and tender. The brisket has a nice bark and a beautiful reddish smoke ring. I don't need the sauce. I find it too tart and scrap off as much as I'm able. Something contributes to the saltiness of the brisket. It's in the bark. I enjoyed it until the saltiness and tartness overpowered the subtle beefiness.

I would return to try other offerings.
