Italian restaurant owners are in my estimation the most business savvy of the restaurateurs. Ruminate on this. How much does a one lb box of Barilla spaghetti cost? The Sausage and Peppers entree below cost $18. Install clean minimalist Old World decor. Charge big dollars on ingredients costing pennies.
OK, so the sausage is quite above average, nice balanced texture in the middle of fat and lean, leaner and smoother than store bought. It's light on fennel with a nice kick taking this beyond the traditional Italian heat level. The peppers by design or lack of intent are barely cooked with a raw sting. It's how I sometimes under cook it. The peppers have little flavor other than natural and the texture sharply contrasts with the mild textured sausage and spaghetti. The spaghetti doesn't taste store bought but is a cut above typical. The sauce is controlled and slightly sweet.
The dish is better than I what I typically receive at chain Italian restaurants. Is it worth the $18? As a customer, no. However some how they must find a way to pay the help and stay afloat.
