Phnom Penh Style Noodle Soup Hu Tiu Nam Vang Nuoc. I'mstuck in a rut ordering pho and needed to branch out so I choose this. The broth overflowed with of wonderful comforting umami, and the rice noodle was perfect in texture and snap. The proteins however missed the mark. The shrimp came overcooked with a dry stringy texture rather than the wonderful snap of shrimp dropped in boiling water for just about a minute. The beef was a cut too lean for my taste. Liver with its squishy brittle texture rarely agrees with my mouth.
I'll stick with the traditional pho.
