Pok Pok Special. Kai Yaang, papaya pok pok, and sticky rice.

Kai Yaang game hen.The plate arrived about 5 minutes after ordering so obviously the hen had been cooked ahead. It was tepid but nonetheless moist, succulent, soft, and tender. Slightly smoky, sweet with a caramel note, garlicky, and hints of Asian flavors which I couldn't quite put my tongue on. The lemongrass filling had the distinctive bitter lemon taste but that flavor didn't seem to be imparted to the hen whatsoever. Cooking it done yet moist is an art. Bravo on the hen.  The tamarind based dipping sauce with the herbs had an earthy, grassy, slight bitter note. The red sauce was sweet and spicy. The  papaya salad while spicy fell flat, lacking depth and the salty sweetness and infusion of fish sauce. It needs an extra few ingredients, one being Thai eggplant.  The stick rice is a foil for the spiciness but otherwise pedestrian.  3 stars.
