Columbia Restaurant Cafe - Tampa International Airport TPA

Columbia appears to be a change from typical airport food. Even though it was early morning and the airport moderately quiet, the glass walls created a haven from the crowd.

Eggs Malaguena is a signature dish comprising chorizo, green peppers, onions, tomato sauce, with an egg on top. It arrived scorching hot. I was in the mood for chorizo and supremely disappointed with only three small chunks of chorizo drowning in a sea of tomato sauce. If blindfolded, I would have thought I was eating an Italian dish with the onions, green peppers, and tomato sauce dominating. I would have liked a runny yolk but I suppose for food safety, they cook the yolk hard. I was disappointed with the meal, seemingly untypical upon order but ultimately typical overpriced airport food.

The waitress was a season pro, pleasant, attentive, nonintrusive, and knew how to read her customers and serve them as they wanted to be served.

Revisit June 23, 2022

Slow service.  Ordinary omelet. It lacks a cohesive harmonious flavor profile.  The whole is less than the sum of the parts.
