A colleague said Umbria serves the ultimate pizza. He said Punch's rates 7 and Umbria's rates 10. Pizza preferences are intensely personal but still that was high praise.
The Litmus test of a good pizza is a plain cheese pizza, no toppings to deflect the shortcomings of the crust, tomato sauce, and cheese. And so it was I ordered a slice of Cheese Pizza here.
In the display case is a pizza slice to show a slice is about a quarter of a medium pizza. What you get when you order a slice is a whole pie as pictured above.
How was it? It didn't meet the hype, not even close. The pizza crust was soft, doughy, and airy with just a hint of crispiness on the bottom. The tomato sauce was too tart for my taste. The cheese or something else made the pizza too salty. The first slice was OK but the saltiness became too much with the second slice.
Overlooking the saltiness, the pizza wasn't bad but it is overpriced at $4.25. I would rate it at about the same quality of a Pizza Hut pizza. That's not to say it's bad because I like Pizza Hut pizza. It's just not a 10.
