What: Porchetta Sandwich
Porchetta Sandwich per the T&T menu comprises marinated boneless pork loin stuffed with a rotating style T&T sausage, grilled and served on a toasted Fleur de Lis ciabatta roll with garlic aioli, salsa verde, and arugula.
The pork is hazelnut finished pork but my tongue is too crude to taste this finer point. The pork is leaner than I anticipated but still tender. That the sandwich has a strong tart lemony dressing masked any delicate pork flavor. The arugula's bitter taste further hides the subtle pork. It's mildly garlicky. I don't recall any salsa verde or maybe it's there in a form I don't recognize. The roll is fantastic in taste, texture, chew, and sturdy to keep the overflowing and wet filling contained. It's a sandwich assembled by someone who cares about his craft and loves food.
When I think Porchetta sandwich these days, I think of the Porchetta sandwich assembled by Porchetta in Toronto. That is my gold standard. The Porchetta sandwich T &T offers makes for an apples to orange comparison. That said, I prefer the apple that Porchetta Toronto is. So for me, this is a very good fresh sandwich but not a great sandwich.
