I wish US food courts are as good and diverse as those in Japan. Good in the sense that not only is the food of high quality but the folks running the operation are courteous, pleasant, and respectful.

So as I see this dish being prepared, fear of undercooked and raw food borne illness registers front and center. The pink roast beef raises the flag and the raw egg sets off the spider senses to 11. I hope the wasabi sauce kills the bacteria.
I mix the ingredients to hide the rawness. It is a delicious. The beef is seasoned, mild, tender, smooth, juicy. It's everything it should be unlike its US cousin. This is what all roast beef should taste like. This dish disappears quickly.
