Jack Knife Platter is a low carb offering with pork carnitas, two eggs of choice, and Christmas chile. The pork chunks are lean but tender. The chile provides a moderate kick Goldilocks right with a hint of bitterness and a slightly greater hint of sweetness. The eggs combines well the pork and chile. It's a simple looking dish with the uncommon phenomenon of tasting much better than it looks. 3.5 stars.
