Even past prime lunch hour, a small but steady stream of customers arrived. I couldn’t tell for sure if these were first timers but because Phoenix despite being on the main street blends into the background.
No. 3 Pho with brisket and beef tendons. The broth, the core of pho, felt like it was made with love. But the portions of brisket and tendons were undoubtedly stingy. Three of each piece falls well short of a meal. In spite of the stinginess, this was top notch pho. It was a pleasant surprise and an unexpected find in Ephrata.
The young man, assuming part of the family owned business, provided nice humble thankful service. I wish Caucasian run restaurants had servers like this but I can't recall any.
