Ask locals what is one of the best restaurants in Hudson, and a likely response is Mama Maria's.
We ordered a couple of their most popular items, Champagne Chicken ($13.25) and Seafood Cannelloni ($12.95), plus a more standard affair of Fettucine Alfredo con Pollo ($11.50). With the entrees, we took a side salad and the Seafood Chowder.

The dinner started with a warm bread basket. We found a half torn/cut roll in the basket, reinforcing the belief that restaurants recycle food. I notified the waiter who apologized and returned with a "fresh basket". Right
The Chowder was good but salty, a precursor to a recurring theme.
Per the menu, the Champagne Chicken consists of a lightly breaded chicken breast sauteed until golden and glazed with a creamy champagne sauce. The breading was very light because it wasn't present. The 1-1/2 inch thick breast was tender and flavorful but too salty.
The Cannelloni Classico side consists of a fresh pasta sheet rolled around seasoned pork, spinach, ham, ricotta cheese, then baked and topped with Parmesan cream sauce. The pasta sheet was thick and tough, detracting from the delicate flavors of the filling. We unanimously agreed this was too salty with an overpowering cream sauce.
The Fettucine also was too salty but not as salty as the Cannelloni. This was packaged to go.
Dessert was Pear Tiramisu ($4.95). The first bite tasted dry but each ensuing bite became better than the previous. This was the best cake style tiramisu had to date.
Mama Maria's offers traditional ordinary food yet the full parking lot attests to its popularity with locals. We won't be adding to the parking lot traffic. 2 stars.
